I’m linking up with Laura at I’m an Organizing Junkie for Menu Plan Monday once again. I’ve done pretty well sticking to the new eating plan. We did splurge and get some pizza Saturday night (veggie for me). I don’t want to be too strict with myself and then not be able to stick with it. I had 2 1/2 pieces and was STUFFED!!! And my stomach wasn’t too happy afterwards. So I’m back on the bandwagon this week!

I’m linking up with Laura at I’m an Organizing Junkie for Menu Plan Monday once again. Even though I’m done with the Elimination Diet, I plan to remain vegan and gluten free for the most part. I’m not saying I won’t eat dairy, meat, or ANY gluten, but I’m aiming to be 80% free of these things, at least until I lose another 30 lbs or so.

Menu Plan Monday – February 20, 2012 February 21, 2012

I’m linking up with Laura at I’m an Organizing Junkie for Menu Plan Monday once again. I may not blog often but I always make time to plan my meals and blog about them! I only half-planned for last week so I’ve included the rest of last week in this week’s menu. This week on the elimination diet I get to introduce soy and beans. Super exciting!!! Still no change. But I’m down 7 lbs, so that’s VERY nice!
Thoughts about last week’s meals
  • Raw Super Green Salad – this needed something that I could never quite put my finger on.
  • Veggie Stir Fry over brown rice – super yummy
  • Collard Wraps with Raw Sunflower Pate – I mixed up some avocado and put tomatoes on these, and squeezed a lemon over the sunflower pate. They were ok. I think I could improve them somehow. Will have to give it more thought. I also recommend shaving off some of the stem.
  • Butternut Squash and Apple Soup – I accidentally got Granny Smith apples for this instead of the McIntosh it calls for. This ended up being VERY tart.
 

Menu Plan Monday – February 13, 2012 February 13, 2012

I’m linking up with Laura at I’m an Organizing Junkie for Menu Plan Monday. This week is week three of the elimination diet and I’m up to six pounds lost. Still no change in how I’m feeling otherwise. I would almost say I’ve been more tired on this diet. Which is a bit disheartening. But I still plan on seeing it through. Today starts phase 3, where I get to add nightshades (tomatoes, potatoes, peppers, eggplant) and some other things. That’s super exciting! If only tomatoes were in season. Our Kroger had some tempting looking heirloom tomatoes.  But I know better than to splurge on something like that in February!
  • Raw Super Green Salad
  • Veggie Stir Fry over brown rice- I just found a basic stir fry sauce recipe and omitted the sesame seed oil and replaced corn starch with arrowroot powder.
  • Collard Wraps with Raw Sunflower Pate – DH is having a flour tortilla with turkey, cheese, and other non-elimination diet toppings.
  • Butternut Squash and Apple Soup – subbing coconut oil for the butter and using fresh apple juice. We’ll be enjoying this soup on Valentine’s Day. Pork or chicken for DH and the babies.
Thoughts about last week’s meals
  • Adzuki Bean and Yam Hash – this was MUCH better than I thought it would be. I would’ve loved some sriracha on it. But it was fine just the way it was.
  • Sauteed Brussels Sprouts with Shallots – these were good but I think I like them better roasted with just EVOO, salt, and pepper.
  • Lettuce Wraps with Garlicky Green Sauce – I’ll be filling my wrap with rice, beans, and sweet potato – these were super yummy. We used Sunbutter (sunflower seed butter) because I didn’t have time to make pumpkin seed butter. Another super yummy sauce!
  • Green Vegetable Soup – I got this from the RebootYourLife website which I can’t get logged into right now to link to. This soup had spinach, broccoli, and zucchini it – super yummy!
  • Blueberry Syrup with Rice – This syrup was such a welcome sweet treat! I ate it over teff for breakfast. It’s super easy to make too.
  • Cinnamon-Sunflower Truffles -I have come across many raw recipes in the past and never quite got it. When you change how you eat, when you make the commitment to eliminate things like sugar, flour, etc., things like these truffles become the most extravagant thing to your taste buds. Kinda like the raw sauces I’ve been eating on everything. When you quit exposing your taste buds to the fake flavors of processed food, you appreciate these much more real flavors so much more. I get it now.

 

Elimination diet – week 2 February 8, 2012

One thing I never really managed to do on the Master Cleanse was properly work out my issues with food. The whole time I was thinking about what I couldn’t have. I started out doing the same thing when I started the Elimination Diet. Instead, I need to focus on how I’m nourishing my body with quality food. The kind of foods I should be eating. Instead of thinking of all the crap I want but shouldn’t be eating.

I’m definitely a healthy overeater. Even though I eat better than most everyone know (less packaged food, less meat and dairy, more veggies), I still eat too much of those healthy foods. So I’m also working on eating mindfully – focusing on each bite, chewing, enjoying the texture and flavor, etc. I’ve already noticed that I’ve been eating less since I started doing this as long as I really focus on it.

I’m supposed to be keeping a food journal but haven’t even started it. I will say twice last week my stomach was bothering me after eating something in the afternoon. The first time it was after eating an apple and the second time was an avocado (and I had a LOT of avocado last week). But nothing this week.

My energy levels have not changed. There was some improvement after the initial 3-day caffeine detox period, but that’s it. And still no change in my eczema or allergy symptoms (minor sinus pressure, itchy eyes and skin).

In terms of sticking to the diet, that has gotten easier. I even survived a Super Bowl party! I took along some Grated Beet and Carrot Salad with Radish-Miso Dressing, Cinnamon Sunflower Truffles, and kale chips. This was a MAJOR feat for me since there wasn’t a SINGLE thing there that I could eat! I’m also less angry when I see and smell people eating fast food (or anything else I can’t have). It’s like I’ve come to terms with it. At the party, I commented to a few people that I couldn’t imagine doing this long term. But now, I think I could. Although I would probably allow myself periods to cheat.

Interestingly, I met someone at that party who is mostly gluten free. She was having stomach pain, reflux, and heartburn. It took her two full weeks of being symptom free before she had relief from her symptoms. It makes me wonder if I might see some improvement next week after I hit my 2 week mark?

To date I’ve lost four pounds. I’d be lying if I said that losing weight wasn’t part of my motivation to do this diet. And that’s why I gave myself a talking to about portion sizes. It’s time to address this issue head on, or plate-on, rather. I thought I could already feel a difference in my waist and then I had a coworker comment that they thought they already saw a difference. I’m never one to turn down any kind words!

I added lemons back into my diet yesterday. Oh how I missed them in my green drinks! And in my hot water. I’m also excited because this opens up my menu possibilities too. Friday I get to have tamari (soy sauce – must be gluten free) and next Monday – NIGHTSHADES!!!

And while I’ve been getting by with our blender and food processor, almost daily I wish I had a VitaMix. I see one in my future!!!

 

Menu Plan Monday – February 6, 2012 February 6, 2012

I’m linking up with Laura at I’m an Organizing Junkie for Menu Plan Monday. I’ve entered week 2 of The Elimination Diet  and things are going well. I even survived a Super Bowl party! I’ll be doing another update on how that’s going so stay tuned.
Thoughts about last week’s meals
  • Sauteed Brussels Sprouts with Shallots, steamed cabbage, and chicken breasts for DH – DH forgot to use the recipe for this so we just had plain Brussels sprouts. And that’s fine by me! Try #2 at this recipe this week.
  • Spaghetti for DH and the twins – steamed broccoli and cauliflower, and brown rice for me – a little bland but it did the trick.
  • Kale with Carmelized Onions, brown rice, and pork for DH – we actually made this with Swiss Chard from the farmer’s market. It was good but nothing spectacular. I think I would like it better with kale.
  • Grated Beet and Carrot Salad with Radish-Miso dressing – I said it last week and I’ll say it again, this dressing is AMAZING!!! It also goes great with this salad. For me, the cilantro pulls all the flavors together.
  • Red Lentil Dal (The Whole Life Nutrition Cookbook, p 154) and sauteed swiss chard – the dal was very good despite having to sub sweet potatoes for white and omitting tomatoes. I ate it over brown  rice one night and then quinoa. One drawback? This makes a TON! If we make it again, I’ll definitely halve the recipe.
